Blueberry, Banana & Spinach Power Smoothie

Our Coachella Blender!

I will always remember this smoothie as my Coachella Power Smoothie. After 3 weeks of having smoothies for breakfast every day during the Clean Cleanse, I was on a smoothie kick and needed my daily fix.

Coachella ended up being after my cleanse so I was hyper aware of the fact that we were going to eat crappy food every day. It might have seemed silly at first, but as we were grocery shopping, I was on a mission to pick up all my essential smoothie ingredients. Needed to make sure we could start our day off right with a smoothie full of antioxidants, omega-3s and fiber!

My friends might have been laughing about a “Post-cleanse Shelly” at first, but once I started making the smoothie every morning, everyone was happy to reap the benefits. Sharing is caring my friends!

It was also on this trip that I found out that you’re not supposed to put an entire banana into the freezer to freeze? Making this smoothie at Coachella was the first time I ever tried adding frozen bananas into my smoothie. (Say what!?) Bananas weren’t allowed during the cleanse, so being able to add it into my smoothie was very exciting! Frozen bananas help give a creamy texture to smoothies and also naturally sweetens it. Some even use it to make a healthier version of ice cream.

Anyway, in my excitement to make frozen bananas for the first time, I actually threw an entire bunch of bananas into the freezer. Peels and all. Woops!

Once frozen, I found that the peels were impossible to take off. Who would have thought!? Lesson learned: always peel your bananas before putting it in the freezer! I also like to chop them up into smaller pieces to help my blender out.

We did most of our grocery shopping at Trader Joe’s, and it was on this particular trip where I discovered this delicious flax seed with blueberries. It worked perfectly with the frozen blueberries in this smoothie, but the flax seed also gave the whole smoothie a nice nutty taste. I’ve tried other brands since, but I’ve been particularly drawn to the flavors of this one!

I always love to top off my smoothies with chia seeds. It’s a super easy way to incorporate extra fiber and protein into my diet and it mixes right in!

Blueberry, Banana & Spinach Power Smoothie

10 oz unsweetened almond milk
ยฝ cup frozen blueberry
ยฝ cup frozen banana
1 handful spinach
2 tablespoon blueberry flax seed
chia seeds to top

1. Add to blender. Blend until smooth and serve with chia seed on top!
