Mango, Avocado & Kale Smoothie

I never imagined that I would like avocado in a smoothie before first trying it during The Clean Program but now it’s my favorite thing to add to a smoothie. The avocado adds a rich and creamy texture that makes it taste luxurious with every sip.

Did I mention that it’s good for you too? One avocado provides your body with vitamins A, C, E, K and B6, along with potassium. It might be high in calories but it’s definitely a “healthy fat”.

To accompany the avocado, I like to add kale (or here just an blend of leafy greens) to boost up the veggie content of my liquid meal as well as almond butter to help add another depth of flavor and a bit of sweetness. The fruit of choice here is mango. Blend it all up with some almond milk and you’re going to have a great start to your morning with this green smoothie.

I know sometimes when you love something too much, you want to add more of the ingredient to the smoothie.

For me, this was the avocado. I loved it so much that I’ve been a bit too enthusiastic and put half of an avocado in the blender. I also stuffed it with a bit too much kale. Clearly I wasn’t following my own recipe. That turned the smoothie into a really thick drink, and a bit bitter because of the greens.

If you have a really great blender, this might not be a problem, but my $15 personal blender here wasn’t chopping it all up.

Mango, Avocado & Kale Smoothie

12 oz unsweetened almond milk
3/4 cups of frozen mangos
1/4 of an avocado
a handful of kale
1 tablespoon of almond butter

1. Add to blender. Blend till smooth and serve!
