Easy Spinach Dip

Spring is officially here, and you know what that means! As the weather warms up, there’s bound to be more get togethers, whether it be picnics or BBQs. For those of you who would still like to contribute the party, but want to contribute with minimal effort, I’ve got a recipe for you.

This spinach dip is not only easy to make, but requires only 7 main ingredients and no more than 10 minutes of prep time. Oh, you can also prepare this the night before, so feel free to make this ahead of time.

 

 

 

I love the brightness in flavor and in color that the fresh ingredients bring to the dip. Just add all the ingredients together, mix, and let it sit in the fridge in order for the dry mix to get some moisture and for   the flavors to mend together. Easy peasy.
Also, since we’re using both mayo and sour cream, I found that substituting with fat free versions of these items doesn’t make a difference in flavor. So, cut some calories out of your dip, no one will notice anyway.
In my photo below, I ended up using the vegetable mix, but I’ve tried it with both leeks and vegetable, both are delicious.

 

Easy Spinach Dip

1 cup light mayonnaise
16 oz container fat-free sour cream
4 oz can water chestnuts, drained and chopped
3/4 – 10 oz package frozen chopped spinach, thawed and drained
1/4 of red bell pepper, diced
1 scallion, diced
1.8 oz package Knorr’s dry leek soup mix, may substitute with vegetable recipe mix

a loaf round sourdough bread, optional, but fun for presentation

1. Prep all ingredients. Dice your water chestnuts, red bell pepper, and scallions.

2. Mix together. In a big bowl, add the mayo, sour cream, thawed spinach (make sure all the water’s squeezed out!), red bell pepper, scallion, and soup mix. Mix together, and let the mixture sit in the fridge for 6-8 hours, or even better, overnight.

3. Cut the top off of the bread bowl. Remove the top and inside of the sourdough bread bowl. Fill the bowl up with your spinach dip and serve with the bread that you removed. Also, I’ve served this with fresh veges, more sourdough bread and tortilla chips.
