When life gives you snowstorms, go make yourself a tropical smoothie. I went ahead and put some lime in my coconut smoothie and was transported immediately to a warmer time and sunbathing in a Caribbean beach without a care in the world. Ahhh…
This smoothie includes the two tropical fruits I had in my fridge, pineapple and mango. Add some coconut milk to the mix and I have the base of something amazing. If I had shredded coconut, I would have added some to the mix. Top it with lime zest for a burst of brightness and you’re going to have yourself a good time.
I also added some chia seeds to add some additional fiber and cashews for a bit of protein. So what are you waiting for, put some lime in your coconut and have yourself a great tropical time!
Tropical Lime in the Coconut Smoothie
10 oz unsweetened coconut milk
½ cup frozen mangos
½ cup frozen pineapples
½ chia seeds (optional)
5 pieces of cashews (optional)
lime zest to top
1. Add to blender. Blend until smooth and serve with lime zest on top!
